Romerige Borrie en Rissie Sous
Bestandele:
● 500g Jalapeño peppers ● 1 ui ● 5g gedroogde pietersielie ● 1 groen/geel/oranje soetrissie ● 4 knoffelhuisies ● 15ml gemmerpoeier/5g gerasperde gemmer ● 15ml kerriepoeier ● 20ml swartpeper ● 15ml borriepoeier ● 1 ½ teelepel opgehoopde sout ● 150ml wit asyn ● 50ml Worcestershire sous ● 650ml kookolie/olyfolie/kanola olie ● 250g lae vet maaskaas
Metode:
● Kap die Jalapeño peppers rofweg en kap die ui, soetrissie en knoffel fyner op ● Plaas die opgekapte Jalapeño peppers in ‘n voedselverwerker en blitz op hoog vir ongeveer 3-5minute, tot fyn ● Verhit olie in ‘n pan oor ‘n hoë hitte en voeg die uie, soetrissie en knoffel versigtig by. Laat dit kook vir ongeveer 2-3 minute ● Verlaag die hitte na medium en voeg die fyn Jalapeño peppers by. Laat dit kook vir 5-10 minute, totdat die mengsel verbruin het ● Terwyl alles kook, voeg die sout, swartpeper, borrie, kerriepoeier en Worcestershire sous, by ● Verwyder die mengsel van die hitte en laat dit afkoel ● Wanneer koel, plaas die mengsel in die voedselverwerker en blitz op hoog vir 3-5 minute ● Voeg die asyn stadig by terwyl die mengsel in die voedselverwerker is. Voeg dan die maaskaas stelselmatig ook by ● Meng die sous vir nog 2 minute in die voedselverwerker totdat die sous ‘n dik en growwe tekstuur het
● Plaas die sous in ‘n glas houer met ‘n deksel en geniet
Wenke:
● Die intensiteit van die geel-kleur, van die sous hang van die hoeveelheid borriepoeier wat jy bevoeg, af. Jy kan die hoeveelhede aanpas na eie voorkeur ● Die speserye kan ook volgens voorkeur aangepas word ● Verskillende rissies kan gebruik word, afhangende van voorkeur en wat beskikbaar is ● Die sous kan tot en met 7 weke in die yskas hou. Hoe langer dit staan, hoe meer geurig raak die sous ● Die sous kan net so saam met maaltye bedien word of in ander geregte gebruik word

Creamy Turmeric Chilli Sauce
You will need:
● 500g Jalapeño peppers ● 1 onion ● 5g dried parsley ● 1 green/yellow/red bell pepper ● 4 garlic cloves ● 15ml powdered ginger / 5g grated ginger ● 15ml curry powder ● 20ml black pepper ● 15ml turmeric powder ● 1 ½ tablespoon salt (heaped) ● 150ml white vinegar ● 50ml Worcestershire sauce ● 650ml cooking oil/olive oil/canola oil ● 250g low fat cottage cheese
Method:
● Roughly chop the jalapeño peppers and dice the onion, bell pepper and garlic ● In a food processor; place the chopped jalapeños and blitz on high for roughly 3-5 minutes (until finely blitzed) ● Heat oil on high, carefully pour the diced onion, pepper and garlic. Cook for approximately 2-3 minutes ● Turn heat to medium then add the blitzed jalapeños, leave to cook for approximately 5-10 minutes (until slight colour change to brown) ● While everything cooks, add the salt, black pepper, turmeric, curry powder and Worcestershire sauce. Mix until properly combined, you will notice a yellow colour change due to the turmeric ● Remove from heat and leave to cool ● After cooled, transfer the mixture back into the food processor, blitz on high for approximately 3-5 minutes ● While the food processor is on, gradually add the vinegar until mixed, then gradually add the cottage cheese ● Leave the processor on for an additional 2 minutes. The chilli sauce should be combined and have a thick and rough texture ● Put the sauce in a glass container with a lid and enjoy
What to keep in mind:
● The yellow colour’s intensity depends on the amount of turmeric you added, one can adjust the ratio to personal preference ● The seasonings can also be adjusted to preferred taste or amounts ● Different types of chillies can be used, depending on preference or availability ● The sauce can last up to 7 weeks in the fridge, the longer it sits, the better the flavour ● The sauce can be served with a meal or used in other cooking
